I love fall. It is the season of the year I do most of my baking. I enjoy the smells of cinnamon, pumpkin and vanilla giving my home a warm comfort food aroma. This year I have a new wonderful vanilla ingredient to use. From THE Vanilla experts at Nielsen-Massey Vanillas, I was introduced to Madagascar Bourbon Pure Vanilla Bean Paste. This top quality gourmet product is pure vanilla with natural vanilla bean seeds in a thicker paste form. The seeds can be seen in your gourmet recipes! Nielsen-Massey Vanillas and extracts have been used by home bakers for years. Thanks to Nielsen-Massey, I was able to try Madagascar Bourbon Pure Vanilla Bean Paste in a delicious, perfect for Halloween recipe.
What is vanilla bean paste? It is a vanilla extract with vanilla bean seeds in it. It is a thicker syrup more than a paste. You can see the flecks of vanilla bean seeds in the paste. Use vanilla bean paste in place of vanilla extract in something you want to feature the specks of vanilla bean. I used my Madagascar Bourbon Pure Vanilla Bean Paste to make decadent baked apples. It was easy to measure the Vanilla Bean paste and mix into the ingredients. It looks rich with all the bean flecks. The rich vanilla flavor was scrumptious.
Here is the recipe for Vanilla Cinnamon Apples courtesy of Nielsen – Massey Vanillas.
Vanilla Cinnamon Apples
4 baking apples
3 tbsp. butter
¾ cup firmly packed dark brown sugar
1 tsp. Nielsen-Massey Madagascar Bourbon Pure Vanilla Bean Paste
1 ½ tsp. cinnamon
¼ tsp. allspice
1 tbsp. brandy
¼ cup raisins
¼ cup walnuts
Pinch of salt
Preheat the oven to 350 degrees. Lightly coat the bottom of a shallow baking dish with nonstick cooking spray. Cut a thin slice from the bottom of each apple so it will stand upright. Scoop out the core of each apple from the top down with the small end of a melon ball cutter, making sure not to core all the way through the apple.
Combine the butter, brown sugar and vanilla paste in a medium saucepan and cook over low heat until the butter is melted, stirring frequently. Remove from the heat and stir in the cinnamon, allspice, brandy, raisins, walnuts and salt. Fill the apples with equal amounts of the filling using a teaspoon. Place the apples in the prepared baking dish. Bake for 20 minutes or until caramelized and fork tender.
Personal note – I used Granny Smith Apples and omitted the raisins. For the kids I would suggest leaving out the brandy, maybe try apple juice instead for the liquid.
I have a wonderful New York Crumb Cake recipe from Martha Stewart. I have made this recipe quite often. I plan on making it with the Madagascar Bourbon Pure Vanilla Bean Paste. I bet it comes out fantastic!
