I decided a while back to try eating Gluten-free. I always had sensitivity to gluten but not enough symptoms to be a concern to my doctor.I still felt it could not hurt to see what happens. It has been almost two months of eating gluten free and I can really feel a difference.

At first I was not sure what to actually eat. I hated the thought of giving up breads, sweets and all the tasty good stuff. A little bit of research and store browsing, I found a whole new world of gluten free foods. One of my favorite brands is Enjoy Life!

Cinnamon Bun – Like eating a cinnamon raisin roll. This was my favorite of the flavors. Yummers!

S’mores – Just like the best campfire flavor ever.

Have you made all your preparations for your Easter meal? My family likes to have Easter Brunch. This Easter I will be enjoying delicious recipes courtesy of Lucky Leaf and Musselman’s. You can make these too!

For a simple to make Ham Glaze:

Maple-Citrus Ham Glaze

Ingredients

  • 2 cup MUSSELMAN’S Apple Sauce (or Chunky Apple Sauce)
  • 1/2 cup maple syrup
  • 1/4 cup butter
  • 1 tsp. grated orange peel
  • Directions

    Combine all the ingredients in saucepan and heat to melt butter. Stirring to blend. Apply glaze to the outside of a whole ham during last hour of baking. (If using a picnic ham or ham slices, cut recipe in half and cover the meat with glaze for the entire bake time.)

    Honey Mustard Ham Glaze

  • 2 cup MUSSELMAN’S Apple Sauce (or Chunky Apple Sauce)
  • 1 cup Honey
  • 1/2 cup brown sugar
  • 2-3 Tbsp. Dijon Mustard
  • Directions

    Combine all ingredients in a bowl and mix well.

    We can’t forget about dessert! This recipe looks easy and has all the good stuff my family likes!

    Cherry Pineapple Surprise

    Ingredients

  • 1 can (20 oz.) crushed pineapple (do not drain)
  • 1 can (21 oz.) LUCKY LEAF Cherry Pie Filling
  • 1 box (18.25 oz.) yellow cake mix (without the pudding mix)
  • 1 bag (7 oz.) shredded coconut
  • 1 cup chopped macadamia nuts**
  • 1 cup melted butter or margarine
  • Preparation
    Preheat oven to 350 degrees. Lightly grease a 9 x 13 baking dish. In the prepared baking dish, layer pie filling over crushed pineapple. Sprinkle cake mix over the top, smoothing evenly and covering the top. Pour the melted butter or margarine over the top, covering evenly. Top with the coconuts and nuts. Bake in the preheated oven for about 50 to 60 minutes or until brown on top and bubbly. ** Optional: — omit coconut and add extra 1/2 cup of nuts — Substitute pecans, peanuts or cashews for macadamia nuts

    Servings: 12

    Cooking Time: 50

    Say what? March 22nd is National Bavarian Crepes Day. Now I am not quite sure what the difference is but is sure sounds delicious. I am thinking it has to do with Bavarian creaminess.

    I am part Italian so anytime a pasta day comes around I love it! You know I have never made home made ravioli or any pasta for that matter. Today is National Ravioli Day! In honor of this scrumptious day, I was researching recipes and found out, it is not too difficult to make your own ravioli. I am looking for a pasta roller so I can give it a try.

    John Chapman lovingly known as Johnny Appleseed gained his name by the introduction of apple trees to Ohio, Indiana and Illinois. He planted nurseries of apple trees where ever he went.

    I found a few delectable apple recipes in honor of this apple history legend.

    SucreeBruleed Apple Cinnamon Pots de Crème . I love crème brulee. Taking is one step further with apple sounds divine.

    Eat Good 4 Life –  Rustic Apple Danish Crostata. Cream cheese filling with apples in a pastry crust. I am going to make this one.

    Kitsch in the KitchenGreen Apple Sorbet. You need an ice cream maker but it sure sounds refreshing.

    Cooking Books Healthy Apple – Barley Salad. I will add this to my summer salad recipes.

    Take a bite of a delicious apple today. Who knows your apple could have come from a tree planted my Johnny Appleseed!
